Easter Potato Recipes

Easter is a important day in our home, and I spend a lot of time (prior to Sunday) preparing food to share with my friends and family in observance of the special day. Each year I try to make it special with family favorites along with exciting new dishes. It never fails that I try a fresh potato idea on my Easter buffet. So, for today’s post, prior to you hitting the supermarket, I thought I’d share some of my favorite Easter, make-ahead potato recipes that are sure to please your crowd on Sunday.

Deep Dish Potato Torta

Deep-Dish Potato Torta with Peppers and Olives This is perhaps my favorite of all! Definitely give yourself time to prepare, and refrigerate overnight, because the flavors fuse and it is simply delightful the next day!

Potato and Egg Dinner Bake This is a sure-fire winner for a brunch casserole. Mix the ingredients together the night before, and pop it in the oven the next day. You’ll love it!

Sautéed Green Beans and Potatoes with Rosemary and Lemon Zest This colorful and fresh side dish “pops” on the buffet. Cook the potatoes the night before, so all you have to do is sauté with the green beans and seasonings for 10 minutes.

Bacon and Chive Potato Pancakes and Arugula Salad Make the mashed potatoes and salad the night before, so all you have to make in the morning are the pancakes.
